i know this is a user support forum and i'm a user too. i didn't want to design a system for me to you. unfortunatelly i have no one experienced in FPGA (also over the internet). i have to learn this device quickly for my Phd thesis and these questions are my basic problems.

Hopefully you can find an engineering student with hardware training who can help you.  I presume your PhD is not related to hardware design, so you have no interest in learning hardware design or the tools needed to support hardware design.  This is a classic case which calls for hiring help for a short-term one-off need.  Maybe there is some hardware PhD candidate in need of some software help, and the two of you can arrange to help each other.
 
Given the little information you have provided, the needed effort involved in design review, implementation, simulation, and debugging easily exceeds the amount of 'spare time' I have for such projects.

just wanna learn how can i give a real-time analog signal to FPGA,  store and read it when i want..  you can give me some advice.

Your request is excessively general, and the commensurate answer is very simple:  use an A/D converter, some memory, and a serial interface.  This isn't enough detail to be useful to you, but that's as much detail as your description affords.
 
Here's a suggestion which may be more useful to you:  Purchase one of the many available FPGA Starter Kits which has an A/D converter, memory, and serial port onboard.  This would save you (and anyone collaborating with you) a considerable amount of time and effort.

in addition i'm a  programmer (I hate the circuits ) but i must do it.

You are much more likely to receive a useful response if you ask a single, specific question.  The questions you asked are vague an disconnected from each other.
 
What is your interest in FPGAs?
1.  Student learning FPGA design or learning system design
2.  Personal hobby project
3.  Design a commercial product
4.  Something else?
 
Have you designed circuit boards before?
 
Do you have someone experienced and knowledgeable in design nearby (not over the internet) who can help you and guide you?
